Baja, Bhajia or Badjia, there is no single way of writing the name of this tasty savoury Mauritian snack. Made with besan (gram flour), Baja is one of the most popular street snack in Mauritius. Usually eat with green chilli paste or tomato and coriander chutney.

During Ramadan in Mauritius, muslims usually prepare Bajja for breaking the fast (iftaar).

Baja is also known as besan pakora or pakoray in India 🇮🇳. Baja is known in South Africa as Daltjie, Curry Balls or Chilli Bites. Baja is known in Suriname as Phulauri.

Ingredients:
2 cups gram flour (besan pure)
1 cup white flour
2 tsp salt
1 egg (optional)
chopped spring onion
1 onion (diced)
1.5 tsp baking soda (bicarbonate)
oil for frying

You can use self raising flour instead of white flour. In that case, use half the quantity of baking soda mentionned.

Chopped coriander and/or mint leaves can also be added.

Diced onion and egg is optional.
