Soğuk Söğüş: Sheep Brains & Tongues Sandwich | Turkish Delicacies

When you visit İzmir, Turkey there is a bizarre sandwich dish that you may spot on the streets. It is called Soğuk Söğüş, literally meaning cold mix. Usually served on a plate over small, fresh, thin pita bread, or wrapped inside pita bread, people of İzmir eat it any time of the day but mostly in the evenings with a glass of cold Ayran, a traditional Turkish drink made of yoghurt, salt, and water.

Traditionally, İzmir Soğuk Söğüş is made with the meat derived from sheep heads, such as brains, tongues, and cheeks.
