HOW TO MAKE Potato Leek Soup from RATATOUILLE | Feast of Fiction

Bounjour Feasters! Today we are coming to you from the NEW Feast of Fiction set! Along with a new set we've also got the perfect recipe for some warm soup belly. Learn how to make Remy's delightful Potato Leek Soup from Disney Pixar's Ratatouille!

INGREDIENTS:
3 tbsp olive oil
2 sprig of celery, chopped
2 leeks, cleaned and sliced
3 large russet potatoes, peeled and chopped
4 cloves of garlic, peeled and halved
1 small white onion, chopped
5 cups chicken stock
1 cup heavy cream
1 tbsp salt
3 tsp black pepper, plus cracked pepper for garnish
½ tsp smoked paprika
1 sprig fresh thyme
Chives, minced for garnish

INSTRUCTIONS:
Wash leeks very well eliminating all dirt and debris. Coarsely chop.

In a large soup pot, add olive oil, garlic, celery, onion and leeks.

Cook medium heat, stirring consistently until soft and translucent, about 20 minutes

Add potatoes, broth and fresh thyme, and bring to a boil. Cover and cook for 20 minutes or until potatoes are soft. Remove from heat and fish out the sprig of thyme to discard.

Puree the soup with an immersion blender. Add heavy cream, salt, pepper, and smoked paprika and simmer until thickened, about 10-15 minutes. Garnish with chives and cracked pepper.
