Full written recipe - Paneer Chilli Milli

Prep time: 15-20 minutes
Cooking time: 35-40 minutes
Serves: 5-6 people

Ingredients:
For Tomato Puree
TOMATO | टमाटर 4 NOS. (ROUGHLY CUT)
CASHEW | काजू 15 NOS. (BOILED)
GARLIC | लहसुन 10 CLOVES
GINGER | अदरक 1 INCH
GREEN CHILLI | हरी मिर्च 1 NO.
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 1 TBSP
CORIANDER POWDER | धनिया पाउडर 1 TSP
CUMIN POWDER | पाउडर 1/2 TSP
TURMERIC POWDER | हल्दी पाउडर 1/4 TSP
Frying paneer
OIL | तेल 2 TBSP
PANEER | पनीर 250–300 GRAMS
For Gravy
OIL | तेल 2 TBSP
CUMIN SEEDS | जीरा 1/2 TSP
BAY LEAF | तेज पत्ता 2 NOS.
CINNAMON | दालचीनी 2 INCH
GREEN CARDAMOM | हरी इलायची 3 NOS.
ONION | प्याज़ 3 MEDIUM SIZED (CHOPPED)
GARLIC | लहसुन 2 TBSP (CHOPPED)
SALT | नमक TO TASTE
HOT WATER | गरम पानी AS REQUIRED
SUGAR | शक्कर A LARGE PINCH
SALT | नमक IF REQUIRED
BUTTER | मक्खन 1 TBSP
OIL | तेल 1 TSP
CUMIN SEEDS | जीरा A PINCH
Tossing Veggies
FRENCH BEANS | फ्रेंच बीन्स 10–12 NOS. (SLICED)
CABBAGE | पत्ता गोभी 1/2 SMALL SIZED
CAPSICUM | शिमला मिर्च 1/2 SMALL SIZED (JULIENNE)
CORIANDER STEMS | धनिये की डंठल 1 TBSP (CHOPPED)
GREEN CHILLI | हरी मिर्च 7–8 (SLICED)
GINGER JULIENNE | अदरक के लच्छेA SMALL HANDFUL
SALT | नमक A PINCH
Final Ingredients
FRESH CREAM | फ्रेश क्रीम 2–3 TBSP (OPTIONAL)
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
ROASTED KASURI METHI POWDER | भुनी कसूरी मेथी पाउडर A PINCH
GARAM MASALA | गरम मसाला A PINCH
Method:
Add all the ingredients of the tomato puree in a mixer jar & blend it into a fine puree.
Cut the paneer into pieces as per your preference & shallow fry them in a pan until they turn light golden brown, transfer them into a plate & set them aside until you prepare the gravy.
Set a kadhai over high heat, let it get hot & then add the oil, let the oil heat up as well.
Next, add the cumin seeds along with the remaining whole spices, stir & cook for a few seconds then add the chopped onions, cook the onions over medium high flame until they turn golden brown.
Then add the chopped garlic, stir & cool the chopped garlic for 2-3 minutes.
Next, add the prepared tomato puree with salt, stir well & cook over high flame until the oil gets separated.
Once the gravy is cooked & the oil gets separated, add hot water to adjust the consistency of the gravy, keep it semi-thick, then taste & add sugar, adjust salt if required, the gravy is ready, switch off the flame while you toss the veggies.
Set a pan over high heat, add butter & oil, let it get hot.
Add the cumin seeds, let them crackle & then add the French beans, stit & cook over high flame for 2-3 minutes.
Then add all the remaining ingredients of tossing veggies & cook over high flame for 2-3 minutes & add them into the gravy along with fried paneer & final ingredients, you can add a splash of hot water so that all the things can mix easily.
Switch off the flame for that the gravy gets hot again & your delicious Paneer Chilli Milli is ready, serve it with some butter naan or any other Indian bread of your choice.
