In today’s video I am going to share with you what I personally think is an amazing recipe.

Actually this "thing" doesn’t have a specific name… it’s a sort of what we call “riso al salto”, but it’s also like a huge "supplì" (the Roman version of Sicilian arancini) made with a tomato risotto and a delicious filling of mozzarella cheese.

This kind of recipe is one those that were invented to recycle risotto or pasta leftovers and that you can find all over Italy in thousands of different versions.

This is my personal one and, since I love supplì, I use flavors and spices that could resemble their taste.

INGREDIENTS:

1 1/3 cups MOZZARELLA CHEESE
EXTRA VIRGIN OLIVE OIL
2 cloves of GARLIC
2 cups TOMATO SAUCE
BASIL
SALT
GROUND BLACK PEPPER
2 cups RICE
some BEEF or VEGETABLE HOT STOCK (or HOT SALTED WATER)
1/2 cup grated PARMIGIANO REGGIANO CHEESE
some grated LEMON ZEST
NUTMEG
1 EGG
BREAD CRUMBS

INGREDIENTI:

250-300 gr MOZZARELLA FIORDILATTE
OLIO EXTRA VERGINE
2 spicchi d'AGLIO
450 gr PASSATA DI POMODORO
BASILICO
SALE
PEPE
350 gr RISO
BRODO di MANZO o VEGETALE (o ACQUA SALATA)
50 gr PARMIGIANO GRATTUGIATO
SCORZA DI LIMONE
NOCE MOSCATA
1 UOVO
PANGRATTATO
