It's that time of year where we all want to start transitioning to fall flavors! Today we're using some of my recently harvested butternut squash to make my favorite fall salad. Cubes of butternut squash are roasted with red onion and bacon. Then added to a bed of baby spinach and topped with blue cheese and maple Dijon vinaigrette. As a bonus, we'll also air fry some maple Dijon salmon to go with our salad.
