MELT-IN-YOUR-MOUTH MISO EGGPLANT RECIPE (vegan)

its been a beat since i just shared an epic recipe with you honeybunches - i hope you enjoy this one as much as i have been.

super soft juicy, melt-in-your-mouth miso eggplant with a slightly crispy caramelised layer on top on a bed of scrumptious soba noodles. it's a seriously easy recipe that i've been having a bunch of week nights lately as it requires so little effort.
