Chicken Sausage Soup
- 8 sticks of fresh parsley on the vine
- 4 carrots sliced
- 4 celery stalks chopped
- 2 medium onions chopped
- 5 oz fresh baby spinach
- 1 wheel of parsley & cheese sausage
- 1.5 qts of chicken broth
- 2 tbsp olive oil
- 1 lb cut capellini pasta
- 12 sticks of fresh thyme
- 4 garlic cloves
- 2 cups of water
- Salt & pepper to taste
- 2 cups of water
- Chunk of parmigiano rind
