Ingredients:

For Marination:
300 grams boneless chicken, cut into bite-sized pieces
2 tablespoons cornflour
1 tablespoon all-purpose flour (maida)
1 tablespoon ginger-garlic paste
1 tablespoon vinegar
1 tablespoon soy sauce
Salt to taste
¼ teaspoon black pepper powder
1 egg
Oil for frying

For the Sauce:
3 tablespoon oil
½ ginger, chopped
6-7 garlic, chopped
3-4 green chillies, chopped
1 large onion, cubed
1 large capsicum (bell pepper), cubed
2-3 spring onions, chopped (white parts separated)
1 tablespoon vinegar
1 tablespoons soy sauce
1 tablespoon tomato ketchup
1 tablespoon red chilli sauce
Salt to taste
¼ teaspoon black pepper powder
1 cup water or chicken broth
1 tablespoon cornflour, mixed with 2 tablespoons water (3 tablespoon cornstarch slurry)
½ cup spring onion greens, for garnish

Instructions:
Marination and Frying:
In a mixing bowl, combine the chicken pieces with cornflour, all-purpose flour, ginger-garlic paste, vinegar, soy sauce, salt, pepper and egg. Mix well to coat the chicken pieces evenly.
Heat oil in a frying pan or wok. Once the oil is hot, fry the marinated chicken pieces for 5-6 mins until they are golden brown and cooked through. Remove them and drain on paper towels or strainer.

Preparing the Sauce:
Heat 3 tablespoon of oil in a wok or large frying pan over medium heat. Add the chopped ginger, garlic, and slit green chillies. Sauté for 2 minutes until fragrant.
Add the cubed onions and capsicum. Stir-fry for 2-3 minutes until they are slightly tender but still crisp.
Add the white parts of the spring onions and continue to stir-fry for another minute.
Add vinegar, soy sauce, tomato ketchup, red chilli sauce. Mix well.
Add salt and black pepper powder to taste. Mix well.
Pour in the water or chicken broth and bring the mixture to a simmer.
Add the fried chicken pieces to the sauce and mix well.
Pour in the cornstarch slurry (corn flour mixed with water) and cook until the sauce thickens, stirring constantly. This should take about 2-3 minutes.
Check the seasoning and adjust if necessary.
Once the sauce has thickened to your desired consistency, add the green parts of the spring onions and give it a final stir.

Garnish:
Garnish with freshly chopped green parts of the spring onions.

Serving:
Serve hot with steamed rice, fried rice, or noodles.
