A ground beef burrito con queso and easy instant pot Mexican/Spanish rice is simple to put together, and by using store-bought flour tortillas, you cut time, not flavor. My whole family loves smothered burritos, but the queso burritos have a special place in our hearts. I know we all have a lot going on, and the time you spend with us doesn’t go unnoticed. *This recipe made 9 loaded burritos

Instant pot Mexican rice
1 tbsp ghee ( choice of oil or butter)
2 cups of long-grain rice
1 1/2 cup water
1 8-oz can of tomato sauce
1 tsp ground cumin
1 1/2 tbsp chicken bouillon
1/2 tbsp garlic powder, onion powder
*slow pressure release

Ground beef filling ingredients
1.3 pounds of ground beef
1 tsp black pepper, garlic powder, onion powder, paprika, salt

Prepped Queso + 1 cup heavy whipping cream + 1 Tbsp pickled jalapeño juice

Pico de gallo
2 Roma tomatoes
1/4 white onion
1/2 jalapeno
Small bunch of cilantro
Salt and lime to taste
