Raspberries & cream were meant to be together, and this gorgeous jello cake is taking that magical combination to a whole new level! Homemade raspberry jello surrounds a gorgeous display of raspberries, both suspended inside and piled on top of this stunning cake creation. The whole spectacular, fruity arrangement sits on top of a thick layer of heavenly mascarpone cream, making this cake taste as out of this world as it looks!

Ingredients:

For the mascarpone cream:

¾ cup mascarpone
⅓ cup sweetened condensed milk
¾ cup plain Greek yogurt
1 vanilla bean pod
3 tbsp unflavored gelatin powder (or 16 soaked gelatin sheets)
½ cup white chocolate chips
⅓ cup crushed raspberries

For the raspberry jello:

6 cups water
⅔ cup unflavored gelatin powder (or 40 soaked gelatin sheets)
1¾ cups sugar
3 tbsp raspberry syrup
red food coloring
45–48 raspberries

For the toppings:

raspberries
fresh mint
