Jalapeños
approx 12 jalapeños
1/2 cup distilled white vingegar
1 cup water
1 dsp salt

Red Onion
2 medium red onions
1/2 cup apple cider vinegar
1 tbsp sugar (granulated)
1 1/2 teaspoons of salt
1 cup water

Riverford Beetroot Recipe
3 medium beetroots
100ml red wine vinegar
juice of one orange
1 star anise
8 peppercorns (I used red but you can use any)
6 cloves
4 allspice berries
2.5cm cinnamon stick
1 bay leaf
enough water to cover beets in the pot (use a lid so the water doesn't reduce)

Cauliflower
1 small head of cauliflower
1tbsp salt
250ml distilled vinegar
100g granulated sugar
1tsp mustard seeds
1tsp coriander seeds
1tsp ground turmeric
1/2 cumin seeds
1/2 chilli flakes

Quick refrigerator pickles are so easy to make but must be kept in the fridge. Try experimenting with your own pickles. Next i'll be doing cucumber pickles!!!
