Vibrant Veggie Pasta: Experience The Deliciousness Of Pasta Primavera!

This easy Pasta Primavera dish is quick, simple and easy to make. It takes about 30 minutes from start to finish. That is why it is perfect for the spring and summertime !

However; you can easily whip up this light, fresh and savoury dish packed with vegetables any time of the year!
Let’s get started:

INGREDIENTS: serves 6-8
750g (28 oz) package California style frozen veggies (or your choice of veggies)
240g (12 oz) frozen peas 🫛
450g (one lb) package Penne Lisce pasta (or your choice of pasta or long noodles)
55g (3 oz) parmigiano reggiano
250-375g (1 - 1/2 cup) olive oil
Salt and pepper to taste

DIRECTIONS:
Prepare 2 pots. One for blanching the vegetables and the other for cooking the pasta.

1) In a medium size pot, pour the frozen veggies. Fill pot with water, salt well. Blanch veggies as per package instructions. Drain in a colander and run very cold water over the veggies to stop the cooking. OR, remove the veggies with a slotted spoon and plunge them in a large bowl of ice
water. Once cooled, drain in a colander.

2) At the same time that the veggies are blanching, you can bring to boil the pot of water for the pasta. Add the pasta, salt well, cook as per the instructions on the package. Periodically stirring.

NOTE: BEFORE DRAINING, RESERVE SOME OF THE PASTA WATER

3) Drain the pasta. Add it back into the pot. Add the veggies, grated cheese,black pepper and the olive oil. Mix well. Add some of the reserved pasta water if needed and give it a good toss.

4) Pour into a large serving dish (true Italian style). Top with a bit more parmigiano, black pepper and drizzle of olive oil.

5) Ready to plate and serve.
