#pooja

Ingredients:

PUZHUKKU

Cow pea 250 g
Dry roast
Wash & put in a cooker with enough water
Cook for 2 whistle

Jaggery 2 to 3 achu
Make syrup
Strain out the jaggery syrup
Add cooked cowpeas to it
Cook till gravy thickens

NEYPAYASAM
Raw rice 1 T cup
Cook well (do not over cook)
Let it cool down

Jaggery 7 pieces (Achu)
Water 1 T cup
Make jaggery syrup
Strain out the jaggery syrup & remove dirt
Add Cooked Raw Rice
Mix well
Let payasam thicken a little bit
Ghee 1 tbsp
When payasam thickens & Ghee starts separating add
Sugar 2 tbsp
Roast Cashews and Raisins in Ghee and add to Payasam

TIPS

When making Puzhukku and Neypayasam, strain jaggery syrup to remove impurities. Combine filtered syrup with fully cooked rice and lentils only, as premature addition can result in hard, undercooked ingredients. Also, avoid overcooking for the perfect texture.
