Vegetarian version of a Shepherds' Pie (instead of the traditional Lamb). Rich flavoursome stewed Green lentils, topped with a crispy breadcrumb and mature cheddar cheese mash.
Lentil Shepherdesses' Pie (Serves 4 generously)

2 tbsp oil 4p
1 large red onion, finely chopped 12p
2 carrots, peeled and finely chopped 12p
2 celery sticks, finely chopped 10p
250g chestnut mushrooms, finely chopped 69p
1/2 tsp Garlic granules 4p
1 large stalk fresh rosemary, leaves chopped finely (or use 1 tsp dried rosemary) 17p
100ml Red wine 67p
2 tbsp balsamic vinegar 6p
700ml Vegetable stock (using 1 cube) 5p
1 tsp Marmite 18p
2 x tins Green Lentils, drained and rinsed 98p

1.2kg Old Potatoes, peeled and diced 48p
80g Butter, melted 45p
100ml semi-skim milk 6p

60g Breadcrumbs 11p
100g Mature Cheddar, finely grated 50p
2 tbsp fresh parsley, finely chopped (Garnish) 16p
1) In a large pan or casserole dish, fry the onion celery and carrot in the oil for 10 minutes. Add the mushrooms, garlic and rosemary, and cook for another 5 minutes.
2) Add the wine and balsamic vinegar, and cook for a further couple of minutes, to burn the alcohol off. Add the vegetable stock, marmite and lentils, and simmer on a low heat, stirring occasionally for 1 hour.
3) Meanwhile, bring a large pan of salted water to the boil and boil the potatoes until soft enough to mash (about 25-30 minutes). Preheat the oven to 180C Fan oven (200C regular oven).
4) Check lentils for seasoning, and then pour into a large pie dish- smooth out flat. Drain the potatoes, and mix with the milk, melted butter and seasoning- mash until smooth, check seasoning.
5) Spoon mash on top of lentils, smooth over, and then create line marks with a fork all over the top. Mix together the cheddar and breadcrumbs, and sprinkle evenly on top of the pie. Bake in the oven for 50 minutes.
6) Remove from the oven, finish with a sprinkling of parsley as garnish, and serve!
Note: A perfect meal in itself- but is also nice served with onion gravy and seasonal vegetables.
