Resep Seblak Kwetiau. Seblak merupakan salah satu makanan khas Bandung. Isian seblak identik dengan kerupuk basah, namun kali ini aku menggantinya dengan kwetiau. Rasanya pedas, gurih, ditambah dengan ceker ayam yang empuk. Pastinya menggugah selera.

Resep Seblak Kwetiau (untuk 2 porsi)

Bahan:
1 ½ porsi kwetiau basah
4 buah bakso sapi, iris
2 butir telur
2 batang daun bawang, iris serong
1 genggam kangkung
1 genggam daun kemangi (opsional)
10 buah cabai rawit merah, iris
2 sdm saus sambal
1 sdm saus tiram (opsional)
1-2 sdt garam
1 sdm gula
1 sdt merica
2 sdt kaldu bubuk / penyedap
1 liter air

Ceker:
200 gr ceker
2 liter air
2 sdm cuka
1 sdt garam

Bumbu halus:
6 siung bawang merah
6 siung bawang putih
3 butir kemiri
4 gr terasi
3-4 buah kencur
8 cabai rawit merah
1 sdt lada putih utuh
1 sdm cabai bubuk
75 ml minyak

Langkah:
1. Rebus ceker dengan air, garam, dan cuka hingga matang dan empuk ±30-50 menit
2. Blender semua bahan bumbu halus lalu tumis dengan api sedang dan tambahkan daun bawang bagian putih, masak hingga wangi
3. Masukkan bakso dan cabai rawit iris, masak hingga kering lalu tambahkan air
4. Bumbui dengan saus sambal, saus tiram, garam, gula, merica, dan kaldu bubuk / penyedap
5. Masukkan telur sambil terus diaduk, tambahkan ceker yang sudah direbus, kwetiau lalu tutup dan masak hingga matang
6. Masukkan daun bawang hijau, kangkung, dan kemangi lalu aduk rata kemudian matikan api
7. Seblak kwetiau siap disajikan

Seblak Kway Teow Recipe: Bouncy Bouncy Spicy Yummy!

Seblak is a signature Bandung dish. Seblak filling is identical with soaked Krupuk but this time, I’m replacing that with Kway Teow. It’s spicy and savory, completed with tender Chicken Feet. It’s definitely mouthwatering.

Seblak Kway Teow Recipe (yield 2 servings)

Ingredients:
1-½ serving fresh Kway Teow
4 pc beef meatball, sliced
2 pc egg
2 pc green onion, sliced diagonally
1 fistful water spinach
1 fistful lemon basil (optional)
10 pc red bird’s eye chili, sliced
2 tbsp chili sauce
1 tbsp oyster sauce (optional)
1-2 tsp salt
1 tbsp sugar
1 tsp pepper
2 tsp stock powder / flavor enhancer
1 L water

Chicken feet:
200 g chicken feet
2 L water
2 tbsp vinegar
1 tsp salt

Blended spices:
6 pc shallot
6 clove garlic
3 pc candlenut
4 g shrimp paste
3-4 pc aromatic ginger
8 pc red bird’s eye chili
1 tsp whole white pepper
1 tbsp chili powder
75 ml oil

Steps:
1. Boil the chicken feet with water, salt, and vinegar until cooked and tender for ±30-50 minutes.
2. Blend all the spices and sauté on medium heat. Add the white part of green onion and cook until fragrant.
3. Add the meatballs and sliced bird’s eye chili. Cook until reduced, then add the water in.
4. Season with chili sauce, oyster sauce, salt, sugar, pepper, and stock powder / flavor enhancer.
5. Add the egg as you stir. Add the boiled chicken feet and kway teow, then place the lid on and cook until done.
6. Add the green part of the green onion, water spinach, and lemon basil. Stir and turn the heat off.
7. Seblak Kway Teow is ready to serve.
