This easy spinach, egg, and potato frittata recipe(菠菜和土豆煎蛋饼食谱) are meatless, making it the perfect choice for a vegetarian meal. It’s also a gluten-free vegetable frittata, perfect to make for a light & healthy weeknight dinner or weekend brunch. This dish is not only super tasty but easy to make and extremely versatile. I simply love that frittatas can be made with just about anything. I have created different size variants of it for brunch, lunch, and dinner. As long as you have some fresh eggs and a few vegetables, you can make a frittata!

Easy Spinach and Potato Frittata Recipe 菠菜和马铃薯煎蛋饼食谱:

Ingredient: 材料：
Potato 1pc 土豆(马铃薯) 1个
Eggs 3 鸡蛋 3颗
Spinach (a bunch) 菠菜 1束
Butter 1/2 tbsp 牛油 1/2汤匙
Salt 1/2 tsp 盐 1/2小匙
Black Pepper 1/4 tsp 黑胡椒 1/4小匙

Instructions:
1. Potato peel-off skin, thinly sliced.
2. Beat the eggs, add salt mix well.
3. Diced the spinach.
4. Saute the spinach until wilted, remove from pan, set aside.
5. Put butter, use medium heat, pan-fry the sliced potatoes.
6. Add salt & pepper for taste.
7. Gently flip the potato slices to cook until they turn golden brown.
8. Transfer the potato to a bowl & mix well with the egg liquid.
9. Use low heat, put butter, pour the egg & potato slices into the pan.
10. Add spinach, spread the spinach evenly.
11. Once the eggs solidify slightly, the bottom can be removable.
12. Use a flat plate to flip it over, then slide it back to the pan.
13. Continue low heat to cook until fully cooked & removable again.

義大利蛋餅料理步骤：
1. 土豆(马铃薯)去皮，切成薄片。
2. 打鸡蛋，加盐拌匀。
3. 菠菜切碎。
4. 炒菠菜断生，从锅中取出，放一旁备用。
5. 放牛油，用中火加热，煎土豆(马铃薯)片。
6. 加入盐和胡椒粉调味。
7. 轻轻翻转土豆(马铃薯)片煎至金黄色。
8. 将土豆(马铃薯)转移到碗中，与鸡蛋液充分混合。
9. 用小火放牛油(黄油)，将鸡蛋土豆片倒入锅中。
10. 加入菠菜，均匀地摊开。
11. 待鸡蛋稍稍凝固并且整个饼可移动。
12. 用一个平的碟子盖住锅面，倒出土豆饼，然后将其滑回锅中。
13. 继续用小火煮至完全熟透，可再次移动。
