This classic pumpkin pie recipe is creamy, smooth, and delicious!

Ingredients:

Pie Crust Filling
15 oz pumpkin puree (one can)
3/4 cup light brown sugar
½ tsp ground cinnamon
¼ tsp ground ginger
¼ tsp ground nutmeg
½ tsp kosher salt
3 large eggs
1 egg yolk (room temperature)
1 cup heavy cream (warm)
½ cup whole milk (warm)

Egg Wash:
1 egg
2 tbsp cream

Whipped cream:
1 cup cream
1-2 tbs sugar
1 tbs bourbon

Instructions:

If using my pie crust recipe (check out my pie crust video), let it sit for 5 minutes before adding the filling. For store-bought, follow packaging instructions.

Mix the pumpkin purée, eggs, warm milk, brown sugar, cinnamon, ginger, nutmeg, and salt in a large bowl.

Add to a pot, then mix well and place over medium-low heat. Stir frequently and cook until the mixture is hot and just starts to bubble.

Brush the pie crust edges with the egg wash and pour the filling into the shell.

Loosely wrap the edge of the pie with foil and bake at 350F for 35-40 minutes, or until the filling is just set in the middle and the knife inserted in the center comes out clean.

You can remove the foil after about 30 minutes. If the crust needs to take on some more color.

Once out of the oven, set aside and cool completely.
