We are back with our Season 2
Mango Pickle Recipe
Ingredients
2 raw Mangoes

Ingredients to Powder
2 tsp Peppercorns
3 tsp Fenugreek seeds
3 1/2 tsp Mustard seeds
2 tsp of Cumin seeds

Ingredients for Seasoning
2 tbsp of Oil
2 tsp of Mustard seeds
12-15 crushed Garlic cloves
A small piece of Hing
1/4 tsp Turmeric powder
2 tbsp Chilli powder
2 springs of Curry leaves
Salt as per taste

Method
Clean the mangoes and pat dry.
Prepare the seasoning - Heat the oil, add mustard seeds, allow them to splutter, add crushed garlic cloves, fry till it leaves aroma, add curry leaves, fry till it becomes crisp. Allow the seasoning to cool down.

Fry all the ingredients to powder, add it to the mixer grinder.
Cut the mangoes into small pieces discarding the seed.
Add salt and chilli powder and mix well.
Now, add the masala powder and mix well.
Add the cooled down seasoning and mix well.
At this stage, you can check for salt and chilli powder and add if required.
Keep it out for an hour or so and savour the taste of pickle.
You can store it in a glass jar, refrigerate and use it for 6-12 months.
