Summer is on the way. Time for warmer nights and cooler dinners. Always time to pull out the salad dressing recipes and liven things up a bit. Today I am sharing a delicious recipe for a creamy cucumber dressing that will be perfect for those summer salads with grilled meats and fresh crunchy veggies. I will be using this in a video for one of those salads later in the week, but first we must make the dressing. This one is full of delicious and simple ingredients that you may already have on hand. I love making delicious things from staples in my fridge and pantry. I think you are going to love this one as much as I did!

Creamy cucumber dressing starts with, you guessed it, cucumbers! I am using my favorite Persian variety of cucumbers but if you cannot find these slim, small, tender bites in your market, go for about a half of a large English variety cucumber. Just be sure to scoop out the seeds first. I did not peel mine because the skin on these are very tender. If you prefer to peel your cucumber, then go for it!

Next the creamy part. I am using some full fat plain Greek yogurt and some full fat buttermilk that I always keep in my fridge. We are going for a drizzly dressing not a thick dip. But if you prefer you can make it thicker by using twice the amount of yogurt or half yogurt and half sour cream. Your choice. I am also adding lots of flavor in the form of aromatics and herbs. Some sweet onion, chopped garlic, fresh chives and dill along with some lemon juice for good acid and some salt and pepper because you never want to forget to season.

I used my Ninja Intellisense blender to mix this up but if you don't have a drink blender, go ahead and use your regular blender or even your food processor. Don't have any of those? No worries! You can grate the cucumber on a box grater, over a bowl, chop all the rest of the ingredients up super fine and mix them together until combined. You will have a bit more texture in yours if you don't use the appliance but it will still be delicious!

Be sure to taste the dressing once you have blended it up. If it is too acid, add a bit of honey or agave to soften the flavor. If you like it a bit more tangy add more lemon juice or some white wine vinegar.

This is delicious used as a salad dressing. If you make the thicker version, you can add this to any veggie tray for dipping. I also think this would be an excellent sauce to go over grilled or steamed salmon, chicken or other fish. You could even use this to dress some cold pasta for a nice pasta salad. There are a lot of possibilities with this one!
