Hey Everybody ! Been a little while, but we are back in business. Today we are making Chocolate Covered Cherry Cordials, but these are way better than store bought !
Recipe is as follows :
Ingredients Needed :
2 tbsp Unsalted Butter ( Softened or melted)
1 to 2 tsp Coconut Based Oil
2 tbsp Light Corn Syrup
2.5 C. Confectioners Sugar
1 Jar Maraschino Cherries
2 C Chocolate Chips / Melts
1/2 tsp Milk
1 tsp Soy Lecithin
Step 1 :
Decarb Shatter. (We suggest you add the shatter to the coconut based oil, or oil blend with butter , which is what we used.) Mix Shatter , oil, butter in a oven safe container, and cover. Then Heat in toaster oven, or oven. We use a really low heat for many hours, but you can put it in for 200 degrees, and run it for about 12-18 mins. Our goal is to have the best tasting, andm ost effective product. Remove from oven and let sit until cooled down to room temp.
Meanwhile grab a pyrex, or metal bowl. Add sugar, extract, and milk.
Mix those ingredients in bowl, then add corn syrup. Work this until it forms a dough like material. Once finished throw in fridge to cool.
Once cooled grab a tsp, and the dough. Use a tsp to measure each ball, if you don't have a scale. Not all will be uniform this way though so expect some slight variation in dosing. Flatten each ball, and wrap it around the cherry, and do that for the remaining balls until they are fully covered
, then put all back in fridge.
Once coated cherries are cooled do this:
Prep everything else needed including another metal or pyrex bowl, and a pot that will fit the bowl inside of it. Fill pot with some water, but not touching the bottom of the bowl.
Add chocolate chips to bowl, and if adding medicine add this now also. Heat on low. You don't want the water boiling, as you can burn the chocolate. If you burn the chocolate you will have to start this part over.
A rubber spatula will work wonders here.
Once all the chocolate is melted, grab the tray of cherries, and dip one by one into the chocolate. Then place on tray lined with parchment paper.
After all cherries are dipped return them to the fridge until cooled. Once cooled take tray out of fridge and inspect each cherry to see if they need dipping again.
Return to fridge for final cooling.
Once all are sealed you can put all the cherries into a sealed container. These taste best after a few weeks. It takes a few days at least for the cordial part to actually melt inside of each cordial.
This recipe should yield about 3 dozen Cherries !
