Ingredients:
Chicken 400 gm
Adark paste -1 tbsp
Lahsun paste -1 tbsp
Lemon - 1
Dahi 1 cup
Cream /malai -1 cup
Chat masala 1 tbsp
Garam masala 1/2 tsp
Black pepper powder 1/2 tsp
Dhania fresh 1 cup
Pudina 1 /2 cup
Hari mirch 12-15
Kaju 15-16
Method:
First, make cuts on the chicken. Add 2 tbsp lemon juice, ginger garlic paste, salt and keep it aside.
In a blender, add fresh coriander, pudina, onions, green chillies, kaju and some water. Grind it to make a paste.
Then in a separate bowl, add plain curd (shouldn't be sour at all). If curd is sour, reduce the quantity.
Then, add cream, chaat masala, black pepper powder, garam masala and salt. Mix all these and then add the grinded paste.
Add your chicken into it and make sure that there is an even coat on it. Let it marinate in the fridge for atleast an hour.
In a grill pan, add some butter, and add the chicken and cook until 70% is done. On the gas, add a grill, and smoke the chicken to give it that smoky flavour.
In a pan, add butter, add dalchini, elaichi and some cloves. After that add the marination paste and let it cook until it reduces. Cover it for 15-20 minutes and keep stirring in between.
Add your chicken and let it cook until completely done. Serve hot with rotis.
Method in Hindi:
Sabse pehle chicken main cuts lagayein. Fir usme thoda sa lemon juice, adrak lehsun ka paste aur namak daal kar mix kare.
Ab ek blender main, dhania, pudina, pyaaz, hari mirch, kaju aur thoda sa pani daal kar mix kar le.
Fir ek alag bowl main, dahi add karein. Dahi bilkul plain honi chaie, agar khatti hai toh quantity kam kar de. Fir usme cream add karein.
Chaat masala, garam masala powder, kali mirch powder, aur namak daal kar ke mix kare aur fir grind kia hua paste daal de.
Isme chicken ko daale aur acche se mix karein. Ismo 1 ghante ke lie marinate hone ke lie rakh de.
Ab ek pan main butter daal ke, chicken ko fry kar le jab tak woh 70% tak ho nhi jata. Usko gas main rakh ke smoky flavour de jese video mai dikhaya gya hai.
Ek alag pan main butter daale aur usme daalchini, elaichi aur laung daale. Fir usme marinated masala ko bhi daale aur cook hone de. 10 minute baad chicken daal de aur dhak kar pakaye. Beech beech main chalate rehna hai.
Jab chicken puri tarah se cook ho jae toh isko serve kar de.
