In this video, I will show you how to select, store, peel, parboil, and freeze jicama in preparation for making jicama French fries and breakfast hash browns. To clarify, you can (1) buy the jicama, peel it, parboil it, and then immediately cook it for fries or hash browns. Alternately, if you don't need the jicama immediately, you can (2) buy the jicama, temporarily store it in the freezer wrapped in foil until you're ready to peel it, thaw it overnight in the fridge, peel it, parboil it, freeze it until you're ready to use it, and then cook it into fries or hash browns. So all the steps are the same except the one or two freezing steps to save the jicama for later. In both cases, you must parboil jicama after peeling it as shown in this video.
