I recorded 3 Classic Lucasarts games with 4 midi devices:

00:00 - FluidSynth
Soundfont I used: SGM-V2.01 (Google is your friend to find it)
I know FluidSynth doesn't really count as a midi device, since the soundfont can make it sound like basically anything, but I just got the most high quality and "classic" sounding soundfont I could find, but it was a very subjective choice, I only put it in there cause it's ScummVm's main selling point audio wise, so it's one of the first versions of these soundtracks you will hear when playing them today.

Setup: Select it in the Audio menu, then select the soundfont in the midi menu


04:34 - AdLib
This one was the easiest to get working, since it's already configured in ScummVm out of the box. It's probably also the version of the soundtrack most people heard back in the day (not including PC Speaker).

09:08 - Roland MT-32
The one everyone likes in these old Lucasarts and Lucasfilm games, and I agree, it is by far the best sounding version of all of these themes.
No, it doesn't sound better on FluidSynth with an MT-32 soundfont, because a lot of these games use some MT-32 bugs to make certain sounds, bugs that are not present in FluidSynth, so plopping the soundfont into it isn't really accurate to using the original, or even emulating it.
I have to admit that I am a bit biased for this version, because it's the one I grew up with, but I think most people will say this one sounds best.

Setup: Go to global options, Select "MT-32 Emulator" in the Audio menu, select "MT-32 Emulator" in the MT-32 menu, and in Paths, point the extra path to where you have the MT-32 firmware ("MT32_CONTROL.ROM" and "MT32_PCM.ROM"). Then, go to game options, and select MT-32 Emulator in the Audio menu.


13:44 - PC Speaker
It's trying, OK?... It might not be as fancy as the rest, but it gets the job done.

Setup: Select "PC Speaker Emulator" in the audio menu.
