Eddo Leaf With Shrimp

Ingredients:

1lb. large eddo leaves.
1 can coconut Milk
8 oz. chicken Gizzard
2 stems shallot
2 onions Diced
2 wiri wiri peppers
2 tsp. minced garlic
1/4 cup and 2 Tbs. Canola oil.
Salt to taste.

Follow video instructions on how to cook gizzard.
Method:

Wash eddo leave and chop.
Cut up onion, chives, and pepper.
Add 1\4 cup of Canola oil to the pot to heat up
Saute Onions Garlic and chives until fragrant, add chopped wiri wiri pepper
Add chopped Eddoe leaves to cook Stir well and let it simmer. Cook uncovered for 10 minutes on low to medium heat until reduced, add 1 cup of hot water and continue to cook and reduced further. Add cooked Gizzard and coconut milk and cook, stirring occasionally so as not to burn Once the coconut milk has been absorbed reduce heat to low add salt to taste.
Remove from the heat and enjoy with rice or roti.
