A quick recipe from mom on how to make Haitian mushroom rice AKA diri djon djon using the bouillon cubes.

This is not the end all be all recipe. Tweak to fit your preference. The rice won't come out the same each time. And my mom changes it up depending on what she has on hand ~_~! She has used lima beans but sweet peas offers a unique favor to it. I personally use less oil and butter and use ground black pepper instead of scotch bonnet.

What remains important is the rice to water ratio, which is 1 cup rice to 1 1/5 cup water. I've made the mistake of using too much water like 2 cups. Also, you steam this rice at the end when the water is pretty much gone. If you steam it before hand, it comes out "fluffier" and the rice grain is "split". The goal is not to split the rice. As my mom has told me :) and you achieve that by boiling out all the water, then steam on very low for like 20 minutes.
