Kachori Recipe

Ingredients:

For the Dough:

2 cups all-purpose flour (maida)
1/4 cup ghee or oil
Salt to taste
Water, as needed
For the Filling:

1 cup moong dal, soaked for a few hours
1 teaspoon oil
1/2 teaspoon cumin seeds
A pinch of asafoetida (hing)
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala
1 teaspoon fennel seeds (saunf)
Salt to taste
1 tablespoon chopped ginger
1 tablespoon chopped green chilies
2 tablespoons chopped cilantro
Oil, for frying
Instructions:

Preparing the Filling:

Drain and grind the soaked moong dal into a coarse paste without adding water.
Heat 1 teaspoon of oil in a pan. Add cumin seeds and asafoetida. Let them splutter.
Add chopped ginger and green chilies. Sauté for a minute.
Add the ground moong dal and cook on low heat, stirring continuously.
Add turmeric powder, red chili powder, garam masala, fennel seeds, and salt. Cook until the mixture becomes dry and leaves the sides of the pan.
Remove from heat and let the mixture cool. Then add chopped cilantro and mix well. The filling is ready.
Making the Dough:

In a mixing bowl, combine all-purpose flour, ghee or oil, and salt.
Mix well until the mixture resembles coarse crumbs.
Gradually add water and knead to form a firm and smooth dough.
Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
Assembling and Frying:

Divide the dough into small equal-sized balls.
Take a dough ball and roll it into a small disc.
Place a spoonful of the prepared filling in the center of the disc.
Gather the edges and seal the filling, ensuring no cracks.
Gently flatten the filled ball and roll it out into a medium-sized disc, about 3-4 inches in diameter.
Heat oil in a deep pan over medium heat for frying.
Carefully slide the rolled kachori into the hot oil.
Fry the kachori until it becomes golden-brown and crispy on both sides.
Remove the fried kachori and place it on paper towels to drain excess oil.
Serve and Enjoy:
