To Make Andhra Style Veg Pulao

Oil - 1 Tbsp (Buy: https://amzn.to/3KxgtsM)
Bay Leaf
Cashew Nuts - 15 NOS
Onion - 2 Nos
Green Chilli - 3 Nos
Potato - 1 No.
Cauliflower - 1 Bowl
Carrot -1 Cup
Beans -1 Bowl
Peas - 1 Bowl
Rock Salt - 1 Tsp
Salt - 1 Tsp
Water - 1 Tbsp
Ground Paste
Water - 2 Cups

Method:

1. For the masala paste, put cinnamon, cloves, cardamom, star anise, marathi moggu/kapok bud, nutmeg, mace, poppy seeds, coriander seeds, cumin seeds, peppercorns, stone flower in a mixer jar.
2. Next, add chopped ginger, garlic cloves, fresh coconut bits, chopped tomatoes, coriander leaves, mint leaves. Grind them all once. Add a little water and grind them all to a fine paste. Keep the masala paste aside.
3. Take a deep pot. Add ghee and oil.
4. Once the ghee is fully melted, add bay leaf and cashewnuts. Saute until they are slightly golden brown in color.
5. Then add chopped onions, slit green chillies and saute until the onions are golden brown in color.
6. Add chopped potatoes and saute for 2 mins. Then add the cauliflower florets. Saute for about 1 min.
7. Then add chopped carrots, beans and green peas. Saute.
8. Add rock salt and mix. Pour 1 tbsp of water, mix and cover the pot with a lid. Steam cook the veggies for about 5 minutes.
9. Then add the ground masala paste. Mix well and saute for about 3-4 minutes to make sure the raw smell goes off.
10. Add the soaked basmati rice and gently mix well. Pour water, mix and cover the pot with a lid.
11. Cook the pulao for 15 mins on a medium low flame. Turn off the stove and keep the pot aside for 5 mins.
12. Delicious and spicy Andhra Style Veg Pulao is ready to be served hot with raitha or any gravy like mirchi ka salan/baingan masala by the side.

Andhra Style Veg Pulao is a very nice, unique and spicy recipe which you can find in the local food shops in Andhra Pradesh. This is very different from the regular pulao we make and there are so many whole spices,condiments, vegetables that go into this recipe, which makes this very flavorful. This is a one pot dish that can be made with a special masala paste. So you can make this pulao really quickly and enjoy for lunch or lumchbox too.
