Almond Triangles Recipe

Ingredients:
• 2 cups unsalted butter, at room temperature, divided
• 3/4 cup granulated sugar, divided
• 1 egg
• 3/4 teaspoon almond extract
• 1/2 teaspoon salt
• 2 3/4 cups all-purpose flour
• 1 cup brown sugar, packed
• 1/3 cup honey
• 1/4 cup heavy cream
• 1 pound sliced almonds

Directions:
1. Make the dough: In the bowl of an electric mixer, beat 1 cup of butter on medium speed until creamy, about 1 minute. Gradually add 1/2 cup of granulated sugar and beat until light and fluffy, about 2 minutes. Add the egg, almond extract, and salt, and beat until combined. Reduce the mixer speed to low and gradually add the flour, mixing until just combined.
2. Prepare the pan: Line a 9x13-inch pan with parchment paper. Press the dough evenly into the pan and push it up the sides. Cover the dough with plastic wrap and refrigerate for 30 minutes.
3. Bake the crust: Preheat the oven to 375°F (190°C). Use a fork to prick the dough 20-25 times across the top. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and place on a wire rack to cool completely.
4. Make the almond topping: While the shortbread crust is baking, heat a large saucepan over medium heat. Combine the brown sugar, honey, 1 cup of butter, and the remaining 1/4 cup granulated sugar. Stir occasionally until the sugar dissolves. Increase the heat to medium-high, bring the mixture to a boil, and cook for 3 minutes without stirring.
5. Add cream and almonds: Remove the pan from heat, then stir in the heavy cream and sliced almonds.
6. Top and bake: Spread the almond mixture evenly over the cooled crust. Bake for about 15 minutes, or until the topping is bubbling.
7. Cool completely: Let the bars cool completely before cutting them into triangles. You can place them in a cool area like a cold garage to speed up the cooling process.
8. Chocolate dip: Once cooled and cut into triangles, melt chocolate (semi-sweet or milk chocolate) in a heatproof bowl. Dip each triangle into the melted chocolate and allow any excess chocolate to drip off.
9. Let the chocolate set: Place the dipped triangles on parchment paper and let the chocolate harden. You can speed up this process by placing them in the refrigerator for a few minutes.
