Hello, foodies! Today, I bring you the recipe for Potato and Cheese Omelet, a delicious breakfast that surpasses the taste of meat!

To create the perfect potato and cheese omelette, gather these ingredients:
10.5 oz (300 g) boiled potatoes
1/2 teaspoon of salt
1/2 teaspoon of herbs de Provence
1/2 teaspoon of black pepper
1 egg
green onion
A small bunch of coriander
Olive oil for greasing

Start by boiling 10.5 ounces of potatoes until they are wonderfully soft.
In a bowl, mash the potatoes and add a little salt, Provencal herbs and a little black pepper. Mix 1 egg, finely chopped green onion and a small bunch of cilantro for a fresh taste.
Heat the pan, grease it with olive oil and spread half of the potato mixture evenly in a thin layer. Cook for about 4 to 5 minutes and apply olive oil on it and return it with a second plate or pan. Cover and cook for another 4 minutes.
