Pickled Beets (& my Favorite Beet Salad)

Pickled Beets:
About 12 C. Chopped beats
6 C. Vinegar (I like Apple Cider Vinegar)
3.C. Water
3 C. Sugar
a few cinnamon sticks
1 tsp. cloves
1 tsp. pepper corns
1 star anise

Mix brine and bring it to a boil. Add beets and boil 10-15 minutes until slightly soft. Pack into pint jars and cover with brine with 1/2 inch headspace. Wipe rims, and place lids.

Process in waterbath for 30 minutes.
