Ingredients Quantity
Oil 1½ tbsp
Spring onion 1 bunch
Cumin seeds 1 tsp
Ginger chopped 1 tbsp
Green chilli chopped 4 no
Potato boiled and cut into diced 2 no
Salt to taste
Turmeric powder 1 tsp
Coriander powder 1 tsp
Cumin powder ½ tsp
Garam masala ½ tsp
Dry mango powder 1 tsp
Ginger juliennes 1 inch
Fresh coriander chopped 3 tbsp

Method :-

1. Place a kadai on medium and heat the oil.
2. Take spring onion and cut the white part of onion then chopped slice.
3. Add cumin seeds, chopped ginger and chopped green chilli sauté for a minute.
4. Add the chopped white parts of the spring onions sauté well.
5. Add the diced potatoes and stir well.
6. Finely chop the spring onions green parts.
7. Add salt, turmeric powder, coriander powder, cumin powder, garam masala and dry mango powder. Mix well to coat the potatoes with the spices.
8. Add the green parts of the spring onions. Mix everything well.
9. Add ginger juliennes and chopped fresh coriander mix well.
10. Side out in serving bowl and enjoy hot with roti, paratha, or as a side dish with dal and rice.
