The Dough:

I talk a bunch in the video but I really want to explain in detail some more about the dough here...

I wanted to create a recipe that was easy to remember. A recipe that wasn't going to be overwhelming for someone who doesn't have a large family or just simply doesn't want to make a massive amount of pita. In comes the 5-2-2 recipe* (sometimes with a little help of half a cup of flour) 5 cups flour. 2 TSP salt. 2 cups warm water. its easy to remember and if you watch the video above and with a little practice you'll have it placed in your head forever.

I use 5 cups of flour* I LOVE Ceresota flour (sometimes also called Heckers, has a little kid on the bag) its and unbleached flour that does wonders for pita making. I do not like using bleached flours like the brand Five roses for example. Some think it helps in stretching out the dough. it does not.

**as I mention in the video I sometimes need an extra half a cup of flour. please be aware of that when making the dough.***** YOU MAY NEED EVEN MORE FLOUR! The point is for the dough to come together and your bowl is clean! If your doing this by hand Good luck!

2 TEASPOONS of SALT. basic. easy. Not overly salty but gives the dough perfect amount of bite.

2 CUPS warm water. think a little warmer than a babies bottle.

I do not add oil. I personally do not find it does anything to the dough. If you like you can add.

I've also heard people add baking powder and some add vinegar. I do not.
