Kadgi Chakko | Konkani Style Raw Jackfruit Stir Fry

Ingredients:
• 2 Cups Raw Jackfruit (Pressure Cook for 2 whistles).
• 1 Tbsp Coriander Seeds.
• A marble sized Tamarind.
• 1/2 Tsp Turmeric Powder.
• 5 to 6 Bydagi Red Chillies(Oil roasted).
• 1/2 Cup Freshly grated Coconut.
• 2 to 3 Tsp Oil.
• Salt to Taste.
• 1/2 Tsp Hing / Asafoetida.
• 1 Tsp Mustard Seeds.
• 7 to 8 Curry Leaves.
• 1/2 Tsp Jaggery.

Method:
• Gently shred the cooked Jackfruit in small pieces.
• In a Mixer jar add grated Coconut, Red chillies, Coriander seeds, Turmeric Powder, Tamarind and little water. Make a coarse paste and keep aside.
• Heat oil in a pan, and then add mustard seeds, hing and curry leaves.
• Now add the ground masala and mix well.
• Cover the lid and cook the masala on low flame for a minute.
• Now add the shredded Jackfruit pieces and coat the masala well.
• Add salt to taste and jaggery and mix well.
• Keep stirring in between till it becomes fairly dry.

Kadgi Chakko is ready to be served with Steamed Rice and Dali Toy.
