Ingredients:

Noodles:

200g vegetable chowmein noodles (or rice noodles/hakka noodles)

Vegetables:

1 cup cabbage, shredded
1 cup carrots, grated
1/2 cup bell peppers (any color), sliced
1/2 cup onions, chopped
2 cloves garlic, minced
2 green chilies, chopped (optional)

Sauces:

2 tablespoons soy sauce
1 tablespoon vinegar
1 tablespoon tomato ketchup
Salt and pepper to taste

Seasonings:

1 teaspoon ginger paste (or grated ginger)
1 teaspoon black pepper powder

Instructions:

1. Cook the noodles according to package instructions. Drain and set aside.

2. Heat oil in a wok or large skillet over medium-high heat.

3. Add garlic, ginger paste, and green chilies (if using). Stir-fry for 1 minute.

4. Add onions and stir-fry until translucent (2-3 minutes).

5. Add cabbage, carrots, bell peppers, and bean sprouts. Stir-fry for 4-5 minutes or until vegetables are tender-crisp.

6. Add cooked noodles, soy sauce, vinegar, tomato ketchup, and sesame oil (if using). Stir-fry for 2-3 minutes.

7. Season with salt and black pepper powder.

8. Serve hot, garnished with chopped scallions (optional).

Tips:

Use a variety of colorful vegetables to make the dish visually appealing.
Adjust the amount of sauces and seasonings to taste.
Add protein sources like tofu, tempeh, or seitan for added flavor and nutrition.
