Ingredients:

Roux:
1 cup flour
2/3 cup vegetable oil

Gumbo:
1 bunch celery
1 green bell pepper
1  yellow onion
3 garlic cloves
1 bunch green onion
1 bunch fresh parsley
2 Tablespoons Old Bay or any other Cajun Seasoning
6 cups Chicken stock
1 package andouille sausages
1 chicken breast
2 cups Shrimps
Salt/Pepper to taste
Hot Sauce to taste

Instructions
 
Make the roux. Combine flour and oil and cook for about 40-45 minutes, do not let it burn!
Cook sausages, chicken and shrimps, set aside
Cook the veggies until soft
Add them to the roux, add chicken stock, parsley, and stir well. 
Bring to a boil over medium heat, stir in cajun seasoning, to taste.
Add sausages, chicken and shrimps.
Season with salt, pepper and hot sauce. Remove from heat and let it rest. Always better on the next day! Serve with the rice or I prefer mashed potatoes.
