Butternut squash, onion, garlic, habanero pepper, Chinese five spice, vegetable broth, citrus, salt & pepper
This recipe is naturally dairy-free and vegetarian.
Ingredients
1 butternut squash, peeled, seeded, and cubed
1 onion, chopped
1 garlic clove, roughly chopped
1 habanero pepper
1–2 tablespoons canola oil
4 cups vegetable broth
1 teaspoon Chinese five spice
Juice of ½ lemon (or similar citrus)
Salt, to taste
Pepper, to taste
Instructions
1. Sauté the aromatics
Heat the canola oil in a large pot over medium heat. Add the chopped onion and cook for 3–4 minutes until softened. Add the garlic and cook for 30 seconds, just until fragrant.
2. Add squash & spice
Stir in the cubed butternut squash and Chinese five spice, coating everything well in the oil and aromatics.
3. Simmer
Add the habanero pepper, lemon juice and pour in enough vegetable broth to just cover the vegetables. Bring to a gentle boil, then reduce to a simmer.
4. Cook until tender
Simmer for 30–45 minutes, or until the squash is very soft.
5. Adjust heat
Carefully remove the habanero. Taste the broth and adjust heat if desired.
6. Blend
Blend until smooth and creamy using an immersion blender or countertop blender.
7. Finish & serve
Adjust consistency with additional broth if needed. Taste once more and serve warm.
