INGREDIENTS:
For Premix:
* Toor dal (तूर दाल) - 1/2 cup
* Chana dal (चना दाल) - 1/2 cup
* Dry coriander seeds (सूखा साबुत धनिया) - 1/4 cup
* Black pepper (काली मिर्च) - 2 tbsp
* Cumin seeds (जीरा) - 2 tbsp
* Curry leaves (कड़ी पत्ता) - some
* Kashmiri red chili powder (कश्मीरी लाल मिर्च पाउडर) - 1 tsp
* Salt (नमक) - 1 spoon
* Asafoetida (हींग) - 1/4 tsp

For Paste:
* Water (पानी) - some
* Tomato (टमाटर) - 3
* Green chili (हरी मिर्च) - 1
* Garlic (लहसुन) - 8-10
* Ginger (अदरक) - 1 inch

For Rasam:
* Oil (तेल) - 1 spoon
* Cumin seeds (जीरा) - 1/2 tsp
* Mustard seeds (राई) - 1/2 tsp
* Asafoetida (हींग) - 1/4 tsp
* Dry whole red chili (सूखी साबुत लाल मिर्च) - 1
* Curry leaves (कड़ी पत्ता) - some
* Turmeric powder (हल्दी पाउडर) - 1/4 tsp
* Tomato paste (टमाटर पेस्ट)
* Red chili powder (लाल मिर्च पाउडर) - 1/2 tsp
* Salt (नमक) - as per taste
* Water (पानी) - 1-1.5 glass
* Tamarind pulp (इमली का पल्प) - 1 serving spoon
* Rasam premix (रसम प्रीमिक्स) - 4-5 spoon
* Coriander leaves (धनिया पत्ती) - for garnishing

For Vada:
* Urad dal (उड़द दाल) - 1 small bowl
* Ginger (अदरक)
* Green chili (हरी मिर्च) - 1-2
* Coriander leaves (धनिया पत्ती)
* Salt (नमक) - as per taste
* Asafoetida (हींग) - 1/4 tsp
* Oil (तेल) - for frying

RECIPE:
For Rasam Premix, take some Tuar Dal & Chana Dal. Wipe them with a wet cloth, dry them then roast them in a pan. Put Coriander Seeds, Black Pepper, Cumin Seeds & Curry Leaves. Roast them all. Keep them for cooling down & put them in a mixer jar, put Kashmiri Red Chili Powder, Salt, Asafoetida then grinds them all. Rasam Premix will get ready.
Take some Premix in a bowl, put Water & keep it aside.
Take some Tomatoes, make cuts in them & boil them. Remove their skin, take some Ginger, Garlic, Green Chili & make a paste.
In a pan, put Oil, Cumin Seeds, Mustard Seeds, Asafoetida, Dry Whole Red Chilies, Curry Leaves, Turmeric Powder & Tomato Paste. Cook it then put Red Chili Powder, Salt, Water & some Tamarind Pulp. Put Rasam Premix & cook it. Garnish some Coriander Leaves.
For Vada, take some Urad Dal, soak it & grind it. Whisk it well then put Ginger, Green Chili, Coriander Leaves, Salt & Asafoetida. Mix them & check the consistency in water.
Fry the Vadas & serve the Hot Rasam with Crispy Vadas.
