Scallion oil noodles!

This one is not for the healthy eaters out here. But if you’re looking for a cheat recipe, then go for this!

The oil infused with spring onion flavor is SO goood, you’ll want to drink it. But we won’t, instead we’ll make this noodle! ❤️

So take
4 tbsps of any neutral oil (yes pls don’t kill me)
3-4 thinly cut scallions / spring onions whites and greens

Start by placing the oil and spring onion whites in a pan and then heating it on low till the whites start wilting.

Then add the greens and let it cook till they get brown. This will let the oil absorb all the flavor.

Once browned but not burnt, remove the onions and keep aside.

In the same oil add 2 cloves of minced garlic and some 40-50g smoked tofu or regular and saute for 2 mins.

Then add 2 tsp dark soy sauce and 1 tbsp light soy sauce along with a pinch of sugar and 1/4 tsp white pepper and boiled noodles.

I’ve used 100 gms and cooked in salted boiling water.
Increase the flame to a high and toss the noodles in till they get a smoky flavor

Garnish with the cooked spring onions and some fresh and enjoyyyyy
