I love adding some toasted/crispy quinoa to my salads. You can also use them to replace breadcrumbs. Make sure you store your toasted quinoa in an airtight container in the fridge.

Ingredients and Directions:
2 cups water, chicken or vegetable broth
1 cup rinsed quinoa

Bring your water or broth to a boil and add your rinsed quinoa. Cover and simmer for around 15 minutes, or until the water is absorbed.

Preheat your oven to 400 degrees F.
Line a large baking pan with some parchment paper and spread your quinoa as evenly as you can. Let it set for around 10-15 minutes to let it cool.
Bake until toasted stirring every 5 minutes so it browns evenly. This could take anywhere from 20-45 minutes. Keep a close eye on it because once it starts to toast, it will go quickly.
Store in an airtight container in the fridge. I hope you enjoy!

If you use this to replace breadcrumbs and to be gluten free, add it to your finished foods because it doesn't need to be toasted more.
