Today The clocks Sprung Forwards and what better way to celebrate, than learning the art of Tapping The Birch: Collecting birch sap for mineral water, wine , beer, vinegar and even syrup!!


An art that up to date I had only ever heard about or seen from afar!!

Last year Liam from in_natureuk treated us to two different types on our Annual Easter Camp!! Apple and Birch and traditional OMG it was spring in a cup!!! The little ones absolutely loved it, so this morning I remembered, not sure if we had missed the window of opportunity ( month at best) I headed out to a lovely copse of woodland close to home, that I often pass, yet only ever visited once!!!

I found the most perfect Birch, she stood tall and proud!! And with no leaves yet showing I was maybe in luck, and I was, I gently connected, left a offering and using the approach I was taught, I tapped the Birch, made a small incision and then with amazement and gratitude, she started to flow, a drop every 2/3 seconds she flowed fast, incredible!! My first encounter of this was with Fergus The Forager, Fergus spoke of intuitive herbalism and asking the Tree!! I was mesmerised!!
