JACKFRUIT RAGI ELA ADA 🔥🔥

A quick recipe
😋To a pan add 1 tsp ghee, 1&1/2 cup finely chopped jackfruit and sauté for 2 min.
😋Now add 3/4 cup jaggery ( varies with the sweetness of jackfruit) and cook for 1 min.
😋Now add 1 cup grated coconut, 2 cardamom,1/2 tsp fry ginger powder and cook until all the water evaporates.
😋Now to a pan add 2&1/2 cup water, salt & coconut oil 1 tbsp.
😋Once it starts to boil add 2 cup ragi flour and turn off the flame and mix well.
😋Rest the dough for 10 min.
😋Apply coconut oil/ ghee to hands and knead the dough for 5 min.
😋Now apply ghee to banana leaf and flatten a small portion of dough.
😋Add the jackfruit filling and fold the leaf.
😋Steam it for 15 min in a idli pot.
😋Serve it hot.

KARA KOZHUKATTAI

A quick recipe
🔥To a bowl add 1 cup idli rava, 1 cup water and soak for 10 min.
🔥Now to a kadai add 2 tbsp oil, 1 tsp mustard, 1/2 tbsp Channa dal, 1/4 tsp cumin, 1 tsp urad dal, green chilli 2, chopped onion 4 tbsp, curry leaves and sauté for 3-4 min.
🔥Now add asafoetida 1 tsp, grated carrot 5 tbsp and sauté for 1 min.
🔥Now add 1&1/2 cup water, salt and boil for 2 min.
🔥Now add the soaked ravai and mix well.
🔥Add some grated coconut and cover with a lid.
🔥Cook for 4 min and rest the mix for 10 min.
🔥Once it cools down apply some water to your hands and roll it as per your desired shape.
🔥Add to a steamer plate and steam in an idli pot for 5 min.
🔥Serve it spicy chutney.

📍Alternative method with normal ravai

CHETTINAD PAAL KOZHUKATTAI

A quick recipe
🔥To a pan add 1/4 cup water, salt and boil for 3-4 min.
🔥Now to a bowl add Idiyappam/ kozhukattai flour.( if you want to use normal rice flour then roast the flour in an empty pan for 2 min in low flame and use the flour)
🔥Gradually add the hot water and mix it with a spoon.
🔥Now use hand and knead the dough. (dough should be soft)
Make small ball out of the dough.
🔥Now to a pan add 2 cup water and allow it boil.
🔥Add the prepared ball and cook for 7-8 min.( cooking time varies with the size of ball you prepared)
🔥Now to a pan add 1 cup jaggery and 1/2 cup water and allow the jaggery to dissolve.( consistency of syrup is not required just boil until the jaggery dissolves)
🔥Strain the syrup and add it to the pan with cooked rice ball.
🔥Maintain low flame and cook for 5-7 min.
🔥Now add grated coconut 2 tbsp, cardamom 2 and turn off the flame.
🔥Add 1 cup thick coconut milk and mix well.
🔥Once it cools down it gets thicker. So turn off the flame when the paal kozhukattai liquid is thinner.

RAGI BANANA LEAF KOZHUKATTAI - With peanuts

A quick recipe
😋To a pan add 1&1/2 cup water, salt, 1 tsp ghee and boil for a minute.
😋Now turn off the flame and gradually add 1 cup ragi flour and mix well.
😋After 2-3 min start to knead the dough.( you should knead for atleast 5 min)
😋Now cover the dough with a cloth.
✅For filling -
😋To a pan add 1 cup peanut and roast it.
😋Remove the outer skin and add it to a mixer and blend it.
😋Now add 1/4 cup jaggery, 2 cardamom and grind it.
😋Now apply ghee to banana leaf and flatten a small portion of dough.
😋Add the peanut filling and fold the leaf.
😋Steam it for 10 min ( if you have flattened it thicker then steam for 15 min) in a idli pot.
😋Serve it hot.

AVAL ( POHA) PIDI KOZHUKATTAI 🤩

A quick recipe
🔥To a mixer add 1 cup aval and grind it to a coarse powder.( like ravai and not as a fine powder)
🔥Now add 4-5 tbsp water (normal water not necessarily hot water) gradually and mix it. ( you should be able to hold the mix together and break it at the same time)
🔥Rest it for 10 min.
🔥To a pan add 1/2 cup jaggery, 1/4 cup water and boil until it gets thick.
(Consistency check - When you drop the syrup in water it should not dissolve and you should be able to collect the syrup to together)
🔥To the aval mix add grated coconut 3 tbsp, cardamom 2.
🔥Then gradually add the syrup to the aval mix and mix it.
🔥Apply ghee to fingers and shape it.

CARROT KOLUKATTAI

A quick recipe
Carrot halwa
🥕To a pressure cooker add chopped 3 carrot , 1/2 cup milk and pressure cook for 3 whistle.
🥕Now mash the cooked carrot, 1/2 cup sugar, saffron 5-6 , 1 tbsp ghee and cook until gets thick.
🥕Now add 1 tbsp ghee , crushed cardamom and mix well.
🥕Now apply ghee / oil to hand and flatten the dough on a banana leaf.
🥕Stuff with carrot halwa and fold it.
🥕Steam for 10 min.
