Today’s Conversations in the Kitchen video features Dove Stackhouse. She is an organic farmer, avid seed saver, founding member of ASAN, and member of the Agroshare Core Team. Dove tells Dr. Koe that her farm and business, Whirlwind Farms, is named for the series of all-season whirlwinds she and her husband observed when they were camping on the property before they could purchase it. After buying the property, they experienced severe tornadoes two years in a row and concluded that “if you can’t beat ‘em, join ‘em.” The Navajo sand painting of whirling winds is their farm logo.
This video shows Dove making an almond flour-based keto pizza crust which she then tops with tomato pesto, fresh vegetables and more cheese. While they make their meal, Dr. Koe and Dove talk about ways to save money on healthy foods; Dove buys nuts like almonds in bulk from Aldi or other stores and grinds them at home to save on the cost of buying pre-prepared keto staples like almond flour. She also uses quail eggs in the recipe, which she gets from a fellow participant in the Madison Farmers Market. Dr. Koe and Dove discuss the high omega-3 composition of quail eggs, and the health benefits of adding more omega-3’s to your diet, including possibly easing the effects of and discomfort associated with arthritis.
They also talk about the seed saving bank that Dove and her husband Russell co-founded with Albertville, AL resident Charlotte Hagood. Dove calls the seeds they’ve had for over 10 years “dead seeds” because they are non-viable, and she shares with Dr. Koe that she has added over 350 varieties with over 1,000 grow-outs to the seed bank. After that, they discuss the best ways to store dry goods in bulk in order to avoid rodents, pests and spoiling, all of which Dr. Koe has had issues with in her own farm kitchen and pantry.
As they finish up preparing the pizza, Dr. Koe explains that she usually ferments the chicken feed she gives her flock. Not only does it decrease the amount you have to feed your hens (making it much less expensive to keep and raise your own meat or egg birds), it also increases the nutritional content of the feed and supports the gut health of the birds. Healthy chickens mean healthy eggs and healthy humans who eat them!
The recipe they used today is below. Please note that in the video, Dove and Dr. Koe tripled the following recipe. Also, the recipe is flexible; Dove uses up a variety of leftover cheese, so you can easily tailor this crust to your own tastes, and top with your favorite healthy toppings. Dove also mentions that you can use this pizza crust recipe as a keto-friendly substitute for garlic bread simply by switching out the traditional sauce and pizza toppings for butter, garlic and herbs.
