Minced pork spicy and sour noodle soup (Shaozi) is a classic noodle soup from Shanxi province of China. The cooked minced pork sauce contains lots of salt, oil & vinegar, it could last for 6 months in the fridge.

I used potato, carrots, black fungus & smoked tofu as the topping for this noodle soup, but you can use any other vegetables you like, such as sour beans, garlic shots and more.

Vinegar is the key to the meat sauce.

Ingredients:3-4 portions

Pork belly mince sauce -

500g pork belly
1 thumb size ginger
half spring onion
5 dry chilli
1 star anise
1 tbsp vegetable oil
1 tsp salt
1 tsp 5 spices powder
2-3 tbsp of chili powder
250g vinegar

Noodle soup base

1 large carrot
1 large potato
3-4 dry black fungus
100g smoked dry tofu
1 tbsp vegetable oil
1 tbsp light soy sauce
1 tsp salt
1-2l vegetable stock
10g chives

1egg
1 tbsp warm water
