Homemade Mayonnaise
Ingredients: 1 large egg, 2 egg yolks, 3 tsp white vinegar, 2 tbsp lemon juice, 1 tsp salt, 1 tsp sugar, 1/2 tsp Dijon mustard, pinch cayenne, 1 3/4 cup avocado oil
Instructions: Add all ingredients to a glass jar. Emulsify with an immersion blender until thickened.
Guacamole
Ingredients: 2 avocados, 1 small diced tomato, 1/4 cup minced red onion, 1 tbsp cilantro, salt, pepper, fresh lime juice
Instructions: Mash avocados and mix with other ingredients to desired texture.
Jalapeño Coleslaw
Ingredients: 2 1/4 cups shredded cabbage, 1/4 cup mayonnaise, 2 tbsp sugar, 1 tsp lemon juice, 1 tbsp chopped pickled jalapeño, salt, and pepper
Instructions: Mix all ingredients in a bowl. Chill for 30 minutes.
Remoulade Sauce (Yield: 3 cups)
Ingredients: 1 cup mayonnaise, 2 tbsp whole-grain mustard, 2 tbsp ketchup, 1 tbsp lemon juice, 1 tbsp Worcestershire sauce, 1/2 cup chopped scallion, 1 chopped celery stalk, 2 minced garlic cloves, 1 tsp paprika, 2 tsp hot sauce, 1/4 tsp black pepper
Instructions: Whisk ingredients together. Chill for 1 hour.
Garlic Shrimp Tacos
Ingredients: 1 lb shrimp (thawed, peeled, deveined), 1/2 stick butter, 5 cloves garlic, 1 tbsp lemon juice, salt, and pepper
Instructions: Melt butter over medium heat. Cook shrimp 1–1.5 minutes per side, then add garlic and cook for 1 more minute.
