FISH STOCK
500 g rock fish (morralla)
half a small leek
half a stick of celery
half an onion
half a tomato
a few cloves of garlic
a bay leaf
1L water

FIDEUA
75 g olive oil
6 prawns (the red ones are best)
2 langoustines
150 g monkfish (rape)
half an onion.
3 cloves of garlic
1 tsp pimentón pepper powder
1 tomato
200g fideuá noodles
500 ml prepared fish stock
half a teaspoon orange food colouring / saffron / turmeric
lemon wedges
