In this episode of The Travel Vault Sessions, we’re heading back to a place that changed my perspective on hospitality forever: SPOONS Cambodia in Siem Reap.

In 2024, I had the incredible honor of joining 6 world-class chefs from Australia, Vanuatu, Iceland, and Cambodia to lead a culinary takeover. Alongside 40 talented students, we pushed through record heat to raise over $6,000 for this life-changing organization.

SPOONS Cambodia is more than a restaurant; it’s a vocational school that gives underserved Cambodian youth the tools, training, and dedication they need to break the cycle of poverty and build a future in the culinary arts and hospitality industry.

As I prepare to return to Siem Reap for the soft opening of their brand-new kitchen and event space, I’m bringing those flavors into my own kitchen today. We are making 3 Cambodian-Inspired Spring Rolls: Beef, Prawn, and kroeung Noodle.
