A long time holiday favorite. Sorry I’m late in the year for this but save this one for the next holiday season or for when you just have that craving for tamales but don’t want to deal with the lard and meat! It’s my first try making these and I’m very proud of the result of the tamale masa/dough. It was very fluffy and taste was great! My non vegan boyfriend enjoyed these too.

Recipe:

Tamale masa/dough:
2 lbs of corn flour
12 oz vegetable shortening
2 tablespoons of salt
6 cups of water
Combine corn flour, shortening, and salt first. Try to eliminate any clumps and combine ingredients thoroughly. Next add water and combine thoroughly again, trying to avoid any dry clumps of dough.

Corn husks:
Soak in hot water and give them a good wash with soapy water and rinse well.

Bean filling:
Used one can of great northern beans
1 teaspoon of salt
1 tablespoon of crushed red pepper
About 1 tablespoon of olive oil or oil of your choice

Get creative with you fillings. I didn’t enjoy the cheese in them but that’s just my preference.

Red Sauce:
-2oz bag of dried California chilies (bring pot of water to boil, enough to cover chiles. Then bring down to simmer and cover pot. Cook for 15-20 minutes til chilies are soft)
-3 large cloves garlic
-1 tablespoon dried oregano
-1 teaspoon salt
-1/2 cup of the water from the cooked chiles
-1 to 1 1/2 additional cup of water, gauge the thickness after blending and more if it is too thick but it should not be watery.
Blend all ingredients in blend and puree, maybe for about 2 minutes if needed. Pour mixture through strainer to get large pieces out.

Green Salsa:
-6 tomatillos
-2 Serrano chilies
-1 jalapeño
-3 large cloves of garlic
-1 teaspoon of salt
-1 cup water (add more if it is too thick for your liking.
Wash tomatillos and chilies. Sear chilies and tomatillos, then pour ingredients into blender and blend til combined.


Cook time was 3.5 hours on low heat. At about 1 hour marks had to add more water. Don’t let the pot run dry with no water.
