I decided to make these three easy and delicious summer salads for you, although it feels like summer may never actually arrive here in the UK! It's been shocking weather here for months. Each of the salads can be customised easily, and are great options to take to a BBQ or pot luck. All are packed with incredible flavours and textures; further proof that a salad doesn't have to mean limp lettuce!

Three Summer Salads Ingredients:
Courgette & Celeriac Salad:
1 tbl Dried Onion Pieces
2 tbl Vermouth
½ tsp Fresh Thyme
4 tbl Chives (chopped)
½ tsp Fresh Oregano (chopped)
1 tbl Garlic (coarse grated)
3 cloves Black Garlic
¼ tsp Black Pepper
½ tsp Capers (minced)
1 tbl Apple Cider Vinegar
175g (6.17oz) Babycorn
½ tsp Sunflower Oil (to toast the babycorn)
Pinch of Salt (for the babycorn)
2 large Courgettes (zucchini)
1 small Celeriac
20g (0.7oz) Toasted Pine Nuts
50g (1.76oz) Toasted Walnuts
1½ tbl Toasted Walnut Oil
1 tsp Nigella Seeds (Black Seeds/Onion Seeds)
2 tbl Black Olives (finely chopped)
½ tsp Red Wine Vinegar

Hot & Sour Carrot Salad:
9 large Carrots
240g (8.46oz) Radishes
300g (10.58oz) Baby Sweet Peppers
3 medium hot Red Chiles
5 Spring Onions
20g (0.7oz) Fresh Coriander (Cilantro)
10g (0.35oz) Flat Leaf Parsley
1 tsp Fresh Ginger (grated)
2 tbl Hemp Seed Oil
Juice of 2 Limes
Juice of 1 Orange
¼ tsp Black Pepper
¼ tsp Salt

Cauliflower & Pineapple Salad:
1 small Cauliflower
½ large Pineapple
2 stalks Celery
1 medium hot Green Chile
2 small Preserved Lemons
10g (0.35oz) Fresh Dill
20g (0.7oz) Flat Leaf Parsley
5 Spring Onions
1 tbl Walnut Oil
¼ tsp Black Pepper
1 tsp Wholegrain Mustard
Juice of 1 Lemon
20g (0.7oz) Toasted Hazelnuts

I’m a vegan that loves animal products, but hates what’s involved; so I’ve dived headfirst into a rabbit hole of different plant-based textures and flavours. These are often the 1st time that I’ve tried a recipe, and I’ll talk you through why I’m using the ingredients and what I think happened when things go wrong.
Grab a vessel of whatever makes you happy and enjoy, but be warned; it’s messy here sometimes!
