This simple Green Gazpacho is so fresh, herbaceous, and full of flavor. It’s one of my favorite summer soups to bring to family gatherings or pot lucks. Gazpacho is a cold soup from southern Spain and Portugal, Its original recipe is with tomatoes but I’ve switched it up with a bright Green Gazpacho using cucumbers, avocados, and cilantro.

GREEN GAZPACHO RECIPE

4 Large Cucumbers
1 Red Onion
1 Green Pepper
1 Bunch of Cilantro
1 Avocado
1 Lemon
3/4 C of Good Olive Oil
1/2 C Sherry Vinegar ( You Can Use Rice or White Wine Vinegar)
2 TBL Salt
1 TBL Pepper
